vanilla cupcakes

I love cupcakes.
I've used this recipe for about 2 years now. It's never let me down.
It produced light, fluffy and tasty cupcakes. Enjoy!

Vanilla Cupcakes

Ingredients:
  • 150g butter, softened
  • 150g caster sugar (white)
  • 175g self raising flour
  • 3 eggs, lightly beaten
  • 1 teaspoon of vanilla extract
  • ** you could add raspberries and bake for 20-24 minutes
  • ** mini muffins only need 5 mins
Method:
  1. preheat oven to 180 degrees celsius
  2. line 2 muffin trays (24) with cupcake papers. You could do 12 large cupcakes
  3. beat the butter and sugar until it changes colour
  4. add eggs and flour
  5. add extract and beat until fluffy (soft peaks)
  6. spoon into cases
  7. cook for 18-20 minutes (I check at 10mins and 15mins)
  8. ice and enjoy

Icing
  • 100g of soft butter
  • 2 cups of icing sugar
  • 1 tbs cocoa powder OR a few drops of colouring
  • 2 tablespoons of milk
Method:
  1. beat butter for 2-3 mins until it changes colour
  2. add icing sugar/colour or cocoa
  3. add milk
  4. beat until fluffy
  5. enjoy!
